CRIMBO COOKIE SLICE

Every year, we get together with friends for a Mid-Winter Christmas dinner party. We all get delegated a course and I am always on dessert (surprise surprise 😉).

 

This year I'm bringing cookie slice - takes no time but makes a delicious dessert that everyone will have everyone asking you for the recipe! 

 

Make time:  20 minutes

 

Makes:  8 Servings

 

You will need:

  • 1 tub of NAKED Cookie Dough (at room temperature)
  • 100g White Chocolate Chips
  • Handful of Dried Cranberries
  • Handful of Pistachio Nuts (chopped)
  • Baking tray lined with parchment paper

 

Method:

  1. Pre-heat oven to 180⁰C (fan-bake)
  2. Mix 240gs of cookie dough, cranberries and  half the chocolate chips in a bowl 
  3. Add the dough mixture to the lined baking tray, approximately 2cm thick
  4. Bake for 6-8 minutes until lightly golden and transfer onto a rack until cool
  5. Pop white chocolate into a small microwave safe bowl and heat on medium in 30 second bursts (2-3 times, stirring in-between).
  6. Drizzle white chocolate over the slice and sprinkle with the chopped pistachios
  7. Once the chocolate has set, cut into bars and enjoy!

 

Keep in the fridge in an airtight container for 2 weeks.
